Carne Asada Tacos

This recipe is from "The Stay at Home Chef" I have just a few simple modifications.

Throw it all in a blender and pour it over your meat.

If you are living the keto lifestyle, use some lettuce cups as your taco shells or simply eat it from your plate with toppings. The original recipe calls for vegetable oil but I personally prefer avacado oil.

Ingredients

2 limes juiced

4 cloves garlic peeled

1/2 cup orange juice

1 cup cilantro, washed and mostly destemmed

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup avacado oil

1 jalapeno roughly chopped into 4-6 large pieces

2 tablespoons white vinegar

2 pounds flank steak

I simply put everything into my blender and voila! MARINATE! I put it into a gallon size bag and 2 hours later it is ready to grill. 2-4 hours provides a nice taste on the outside of the meat. Marinating overnight or for 8+ hours will allow more of the marinade to sink into the meat. This marinade is really great on chicken too.


For a 1.5-2lb flank steak, grilled on a preheated grill for 5 minutes on each side. This usually provides enough 'rare' meat and enough 'medium' meat for both of us plus lots of leftovers.


I like to use a combination of pepper jack and cheddar with this but any cheese that you like will work. I top with pico de gallo and some chipotle tabasco all stuffed into a lettuce leaf.


If you aren't on the keto train then this would be great in a quinoa or rice bowl. I have also eaten it on top of a salad also. Let me know what you think!
