Fathead Dough to fulfill your carby desires!

Cook time: 10-12 minutes Total Time: 20-25 minutes 2 Servings

Preheat oven to 425 F

Ingredients:

3/4 Cup mozzarella cheese (shredded)

1 Tablespoon cream cheese

2.62 (a touch over 2 1/2)Tablespoons coconut flour

1/2 teaspoon Italian seasoning or any combination of seasoning that you like.

1 Egg beaten

Toppings/Filling of your choice


Tools needed:

1 Baking Sheet

1 Large microwave safe bowl

1 Silicone scraper/spatula

Parchment paper

Sharp Knife

Whisk or fork and small bowl for beating egg

Place mozzarella and cream cheese in a large microwave safe bowl, large enough to add additional ingredients and mix. Microwave for 30 seconds. Remove from microwave and mix using a rubber scraper/spatula. Microwave for 5-10 seconds more and stir again with spatula. It should be a smooth consistency. If it is stringy or not smooth, microwave in 5-10 second intervals till it is.


Add egg, coconut flour and any herbs or spices. Mix well, pushing the dough into the sides of the bowl to push the flour and egg into the cheese mix. You should be able to notice that the yellow of the egg and coconut flour is mixing with the white of the cheese. Eventually it will all become a buttery yellow color.


Prepare your baking sheet with 2 pieces of parchment paper large enough to cover the surface of the baking sheet. Place 1 piece of parchment on your baking sheet, turn out your well mixed dough onto the parchment, cover with the second piece of parchment paper. Use this to form your pizza/stromboli dough by pressing the dough out flat. You can do whatever shape you like for pizza. For stromboli I try for a rounded rectangle of sorts.


Once you get a nice shape for your stromboli, I like to put my fillings in and make some cuts on the sides to help fold up my edges. This isn't necessary but will help with air bubbles.


For stromboli cook 10-12 minutes depending on your oven. It will turn golden brown when cooked.


For pizza, the best idea is to pre cook the dough for 5 minutes then poke holes in any bubbles with a fork. Add your toppings and cook for another 5 minutes or more depending on desired level of doneness.


Some possible delicious flavor combinations:

Pepperoni and Mozzarella with marinara or pizza sauce to dip

Ham and cheese

Cheesesteak (traditional or buffalo)

Roasted vegetables and provolone with pesto
