Keto Cheesecakes! Mini Single Servings

Im just going to get down to business here.


KETO CHEESECAKE


It's amazing and it's delicious but obviously it still has calories and needs to be eaten in moderation.


Here it is...

312 Calories Each

4 net carbs

30g fat

6g protein


Cheesecake Filling

4 Ounces Cream Cheese softened

1 ¼ tsp Lemon Juice

½ tsp Vanilla Extract

½ Cup Heavy Whipping Cream

¼ Cup Lakanto Powdered Sweetener, sifted to remove clumps



8-10 Drops Stevia


Crust

½ Cup Almond Flour



1 ½ Tablespoons Lakanto Sweetener


2 Tablespoons Melted Butter

½ tsp cinnamon

Pinch of Salt



For Filling:

Beat softened cream cheese, lemon juice and vanilla, beat till incorporated

Add in heavy cream and beat till combined.

Add sifted powdered sweetener and stevia to your taste

Continue to beat till well incorporated and thickkkk.




For Crust:

Place Almond Flour, Sweetener, Cinnamon and Salt into a bowl and whisk together.

Add melted butter and stir with spoon or rubber spatula till a crust mixture forms.



Divide crust mixture between 4-1 cup pyrex dishes. Push the crust mixture into the bottom of the dish to form a firm crust. I do this with a mojito muddler!


Divide Filling mixture equally between all 4 dishes.


Eat right away or store in fridge till you are ready to eat them.


You can top these with whatever you'd like. For special occasions, I like to get fancy and simmer some fruit with lakanto monkfruit to make a nice sauce. You can melt some chocolate chips and cream to make a nice sauce. 2tbls heavy cream and 1/4 cup chips. You can top with nuts or plain chips. The possibilities are endless really. Macros are for PLAIN cheesecake, no toppings added. Let me know how you like this recipe and leave a comment below.


Alternatively, you can double this recipe, put it into a springform pan and make a WHOLE cheesecake to serve a crowd. You can also make half the crust and make two cheesecakes instead of 4. As I said, the possibilities are endless but modifications will change calories and macros.
