Yovana's Chocolate Chip Cookies

The wonderful Yovana Mendoza shared a quick recipe on one of her videos the other day and it looked fantastic. I listened to it 5 times in an attempt to transcribe it because I can't seem to find it anywhere.

Yovana's Keto Chocolate Chip Cookies

Preheat oven to 350 F

Bake 10-12 mins


Dry Ingredients

1 1/2 Cup Almond Flour

2 Tbls Coconut Flour

1 tsp Baking Powder

1/3 Cup Monkfruit Sugar

Pinch of salt

Wet Ingredients (add 1 by one to dry ingredients)

1 Beaten Egg

1/4 tsp Vanilla powder or 1 tsp vanilla extract

1/3 Melted coconut oil


At the end...

1/4 Chocolate chips of choice


Mix all dry ingredients well then start incorporating wet ingredients one by one. Stir in chocolate chips last. A simple wooden spoon or rubber spatula will work for mixing.


Chill dough for an hour in the fridge or 10 mins in the freezer. It will become very firm!


Form into 1 1/2 inch balls with your hands or use an ice cream/cookie scoop. Place balls on parchment paper and flatten with your fingers till they have a good cookie shape. They will not spread much while cooking.


Bake on 350 F for 10-12 mins or till edges become golden.


They will be very loose when they are finished cooking, this is normal. They will firm up to a nice chewy cookie when they cool.

Notes on ingredients: For almond flour, I like anthony's super fine blanched almond flour. It is both certified gluten free and very finely ground which is a perfect texture for baking. For coconut flour, anthony's makes that also but I have been using viva brand which is very high quality, organic and certified gluten free. For sugar I like lakanto granulated for this recipe and most recipes that require baking, you can also use granulated erythritol and possibly add a few drops of stevia to balance out the flavors. Chocolate chips, I used lily's brand but chocozero also makes really good ones!
